Homemade Crystallized Ginger

There are so many possibilities for this delicious sweet ginger treat. It’s useful for calming upset stomachs and for use prior to road trips to prevent motion sickness. Ginger is both calming to the stomach and tastes delicious. This recipe would be great dipped in dark chocolate and packaged in tins for holiday gifts.

Ingredients

  • 1 Fresh Ginger Root (peeled and sliced)
  • Water (to cover ginger root)
  • 3 tablespoons Raw Cane Sugar (or amount equal to water left in pan

Directions

  • Place ginger root in a saucepan and add water to cover
  • cook gently until tender—about 30 minutes or until it has about 3 tablespoons of water left
  • Place equal amount of sugar to water in saucepan
  • Bring to a boil, stirring often, until the ginger is transparent and the liquid is almost evaporated
  • Reduce the heat and cook, stirring constantly, until almost dry
  • Toss the cooked ginger in sugar to coat
  • Store in an airtight jar for up to three months
